EASY MEATBALL PHO

INGREDIENTS
A handful of Cilantro with leaves taken off
Small handful of dried shrimp
2 lb of beef bones
1 garlic smashed
½ of white onion sliced
1 Green Onion chopped
1 Carrot cut
1 Celery cut
2 cans of chicken broth
1 Cinnamon stick
1 Star Anise
2 tbsp of sugar
½ tsp of salt
1 tbsp of chicken powder (chicken bullion)
½ tsp of fish sauce
½ tsp of soy sauce
½ tsp white pepper
½ tsp of black pepper
3 tbsp of white cooking wine
1 package of meatballs
1 package of Bean sprouts
1 package of rice noodles
DIRECTIONS
Fill a medium pot with water half way (just enough for the beef bones to soak). Let water come to a boil.
Once water is at a boil, place your beef bones in the boiling water. Boil for two minutes.
Afterwards, drain water and clean the beef bones with cold water. Place aside.
In a large pot, boil 4 quarts of water.
When the water has come to a boil, add two cans of chicken broth. Let it slightly boil.
Once the mixture has come to a slight boil: add your beef bones, dry shrimp, carrots, cilantro, onion, smashed garlic, sugar, salt, chicken powder, fish sauce, soy sauce, white pepper, black pepper, and white cooking wine. Stir and cover.
Once boiling, lower heat, and simmer for 30 minutes.
After 30 minutes, skim the fat off of the broth.
Microwave the cinnamon stick and star anise for 1 minute. Drop both into the broth.
Take the cilantro out of the broth, and let the broth cook for 1 hour.
After it has been cooking for an hour, put the meatballs in the broth. Let it simmer for 30 minutes.
After you have tasted the soup and adjusted for salt. Add the chopped green onions.
In a bowl, add a handful of bean sprouts and a handful of the rice noodles. Rinse and drain both with cold water.
Put the bowl in the microwave , and microwave for two minutes.
Scoop in the broth, toppings of your choice, and enjoy!
